Ingredients (Serves 2-3)

For the Chicken:
  • 2 boneless, skinless chicken breasts
  • 2 tbsp honey
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ยฝ tsp smoked paprika
  • ยฝ tsp cumin
  • ยฝ tsp salt
  • ยผ tsp black pepper
For the Mango Salsa:
  • 1 ripe mango, diced
  • ยฝ red bell pepper, diced
  • ยผ cup red onion, finely chopped
  • ยผ cup fresh cilantro, chopped
  • 1 small jalapeรฑo, finely chopped (optional for heat)
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  1. Marinate the Chicken:
    • In a bowl, whisk together honey, lime juice, olive oil, garlic powder, smoked paprika, cumin, salt, and black pepper.
    • Coat the chicken breasts with the marinade and let sit for at least 20 minutes (or up to 2 hours for extra flavor).
  2. Prepare the Mango Salsa:
    • In a bowl, combine diced mango, red bell pepper, red onion, cilantro, jalapeรฑo (if using), and lime juice.
    • Mix well and season with salt to taste. Set aside to let the flavors meld.
  3. Cook the Chicken:
    • Heat a skillet or grill over medium heat.
    • Cook the chicken for 5-6 minutes per side, or until fully cooked (internal temp of 165ยฐF).
    • Let the chicken rest for a few minutes before slicing.
  4. Assemble & Serve:
    • Slice the chicken and serve over rice, quinoa, or greens.
    • Spoon the fresh mango salsa over the top.
    • Garnish with extra cilantro and a lime wedge.
