Ingredients

For the Base:
  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet (1 oz) taco seasoning
  • ยฝ cup water
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed (optional)
  • 2 cups crushed tortilla chips
For the Topping:
  • 1 ยฝ cups shredded cheddar cheese (or Mexican blend)
  • 1 cup shredded lettuce
  • ยฝ cup diced tomatoes
  • ยผ cup sliced black olives (optional)
  • ยผ cup sour cream (for serving)
  • 2 tbsp chopped cilantro (optional)

Instructions

1. Cook the Beef:
  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a large skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is soft. Drain any excess grease.
  3. Stir in taco seasoning and water, then simmer for 2-3 minutes until thickened.
  4. Add diced tomatoes and beans (if using), stirring to combine.
2. Assemble the Casserole:
  1. Spread crushed tortilla chips evenly in the bottom of a greased 9×13-inch baking dish.
  2. Spoon the meat mixture over the chips, spreading evenly.
  3. Sprinkle shredded cheese on top.
3. Bake & Serve:
  1. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let it cool for a few minutes.
  3. Top with lettuce, tomatoes, olives, and sour cream before serving.
  4. Garnish with cilantro, if desired.

Serving Suggestions:

  • Serve with extra tortilla chips or warm flour tortillas.
  • Add a drizzle of salsa or guacamole for extra flavor.
