Sweet and Smoky BBQ Steak Medallions

Ingredients:

– 1 pound beef steak (such as sirloin or filet mignon), cut into 1-inch medallions
– 1/4 cup BBQ sauce (preferably sweet and smoky)
– 2 tablespoons olive oil
– 1 teaspoon smoked paprika
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cloves garlic, minced
– Fresh parsley, for garnish (optional)

Directions:

1. In a bowl, mix together the BBQ sauce, olive oil, smoked paprika, salt, pepper, and minced garlic.
2. Add the steak medallions to the marinade and coat well. Allow to marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
3. Preheat a grill or skillet over medium-high heat.
4. Remove the steak from the marinade, letting excess drip off, and place on the grill or skillet.
5. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
6. Let the steak rest for a few minutes before slicing. Garnish with fresh parsley, if desired, and serve.
