For the Zucchini Boats:

  • 1 tsp salt

  • 1 tsp smoked paprika

  • 1 cup tomato sauce (or diced tomatoes)
  • ยฝ cup shredded cheese (cheddar, mozzarella, or Parmesan)
  • ยผ cup fresh parsley or cilantro, chopped

Instructions

1. Prepare the Zucchini:

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Cut zucchinis in half lengthwise and use a spoon to scoop out the centers, leaving about ยผ-inch of flesh around the edges.
  3. Brush with olive oil, season with salt and pepper, and place on a baking sheet.

2. Make the Filling:
