Ingredients (Serves 4)
For the Zucchini Boats:
- 4 medium zucchini, halved lengthwise
- 1 tbsp olive oil
- Salt & black pepper, to taste
For the Filling:
- 1 lb ground beef

- 2 cloves garlic, minced
- 1 small bell pepper, diced
- 1 tsp salt
- ยฝ tsp black pepper
- 1 tsp smoked paprika
- 1 tsp Italian seasoning (or taco seasoning for a twist)
- ยฝ tsp cumin (optional)
- 1 cup tomato sauce (or diced tomatoes)
- ยฝ cup shredded cheese (cheddar, mozzarella, or Parmesan)
- ยผ cup fresh parsley or cilantro, chopped
Instructions
1. Prepare the Zucchini:
- Preheat oven to 375ยฐF (190ยฐC).
- Cut zucchinis in half lengthwise and use a spoon to scoop out the centers, leaving about ยผ-inch of flesh around the edges.
- Brush with olive oil, season with salt and pepper, and place on a baking sheet.
2. Make the Filling:
- Heat a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add onions, garlic, and bell pepper, cooking until softened.
- Stir in salt, black pepper, paprika, Italian seasoning, and cumin.
- Pour in tomato sauce and simmer for 5 minutes.
3. Stuff & Bake:
- Spoon the beef mixture into the zucchini halves, pressing down slightly.
- Sprinkle with shredded cheese.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
