Ingredients (Makes 2 Sandwiches)
For the Sandwich:
- 4 slices sourdough or ciabatta bread
- 4 slices mozzarella cheese (or provolone)
- 4 slices crispy bacon
- ยผ cup sun-dried tomatoes, chopped
- 2 tbsp butter (for grilling)
For the Pesto Spread:
- ยผ cup basil pesto (store-bought or homemade)
- 2 tbsp cream cheese (for extra creaminess)
- 1 tbsp grated Parmesan cheese
Instructions
- Prepare the Pesto Spread:
- In a small bowl, mix basil pesto, cream cheese, and Parmesan until smooth.
- Assemble the Sandwiches:
- Spread the pesto mixture on one side of each slice of bread.
- Layer with mozzarella cheese, crispy bacon, and sun-dried tomatoes.
- Top with another slice of bread.
- Grill the Sandwiches:
- Heat a skillet over medium heat.
- Spread butter on the outside of each sandwich.
- Cook for 2-3 minutes per side until golden brown and the cheese is melted.
- Serve & Enjoy:
- Slice and serve warm with a side of soup or a simple salad.
