Spicy, creamy, and full of flavor—this Rotel Hot Sausage Dip is a crowd favorite!
Ingredients:
- 1 lb ground hot sausage
- 1 (10 oz) can Rotel diced tomatoes with green chilies
- 1 (8 oz) package cream cheese, softened
- 1 cup cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper (optional for extra heat)
- Tortilla chips, crackers, or veggies for serving
Instructions:
- Step 1: Brown the Sausage
- In a skillet over medium heat, brown the ground sausage until fully cooked, breaking it apart with a spoon. Drain any excess grease.
- Add the Rotel diced tomatoes with green chilies (with juices) to the pan, stir to combine, and cook for 2 minutes.
- Step 2: Cream Cheese & Cheese
- Reduce heat to low and add the cream cheese to the pan. Stir until the cream cheese has melted and is fully incorporated into the mixture.
- Add the shredded cheddar and Monterey Jack cheeses. Stir until the cheese is melted and the dip is smooth.
- Step 3: Season & Serve
- Stir in the garlic powder, onion powder, and cayenne pepper (if using).
- Continue to cook on low for another 2-3 minutes until everything is well combined and heated through.
- Serve warm with tortilla chips, crackers, or veggies for dipping.
Storage & Reheating:
Fridge: Store leftovers in an airtight container for up to 3 days.
Freezer: You can freeze the dip for up to 2 months (without the chips).
Reheat: Warm on the stove or in the microwave, adding a splash of milk or cream to reach desired consistency.
