Ingredients
For the Short Ribs:
- 3 lbs bone-in beef short ribs (about 4-6 pieces)
- 2 tbsp olive oil
- 1 tsp salt

- 1 tbsp flour (optional, for thickening)
- 1 onion, diced
- 2 carrots, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups dry red wine (Cabernet Sauvignon or Merlot works well)
- 2 cups beef broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 bay leaf
For the Creamy Mashed Potatoes:
- 2 lbs Yukon gold potatoes (or Russet)
- ยฝ cup heavy cream (or milk)
- 4 tbsp butter
- ยฝ tsp salt (adjust to taste)
- ยฝ tsp black pepper
- ยฝ tsp garlic powder (optional)
Instructions
Step 1: Sear the Short Ribs
- Preheat the oven to 325ยฐF (160ยฐC).
- Pat the short ribs dry and season with salt and black pepper.
- Heat olive oil in a large oven-safe pot (like a Dutch oven) over medium-high heat.
- Sear the short ribs on all sides until browned (about 3-4 minutes per side). Remove and set aside.
Step 2: Build the Flavor
- In the same pot, add diced onions and carrots. Cook until softened (about 5 minutes).
- Stir in garlic and tomato paste, cooking for another minute.
- Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for 5 minutes.
Step 3: Braise the Ribs
- Add the beef broth, rosemary, thyme, and bay leaf. Return the short ribs to the pot.
- Cover and place in the preheated oven. Braise for 2ยฝ to 3 hours until the meat is fork-tender.
Step 4: Make the Mashed Potatoes
- While the ribs are cooking, boil peeled potatoes in salted water until fork-tender (about 20 minutes).
- Drain and mash the potatoes. Mix in butter, heavy cream, salt, black pepper, and garlic powder (if using). Stir until smooth and creamy.
Step 5: Serve & Enjoy
- Once the ribs are done, remove them from the pot. If needed, simmer the sauce on the stove to thicken.
- Serve the short ribs over a generous scoop of mashed potatoes. Spoon the rich red wine sauce over the top.
