Perfectly Roasted Sweet Potato Chunks

Golden, crispy on the outside, and tender on the inside—these roasted sweet potatoes are a simple yet flavorful side dish!

Ingredients:

  • 2 large sweet potatoes, peeled and cut into 1-inch chunks
  • 2 tablespoons olive oil (or melted butter for extra richness)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional, for a smoky kick)
  • 1 teaspoon dried rosemary or thyme (optional, for an herby touch)
  • 1 tablespoon honey or maple syrup (optional, for a touch of sweetness)

Instructions:

  1. Preheat the Oven
    • Preheat your oven to 425°F (220°C).
    • Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the Sweet Potatoes
    • In a large bowl, toss the sweet potato chunks with olive oil, salt, black pepper, garlic powder, smoked paprika, and dried herbs.
    • If using honey or maple syrup, drizzle it over the potatoes and toss again to coat evenly.
  3. Roast the Potatoes
    • Spread the potatoes out in a single layer on the prepared baking sheet.
    • Roast for 25-30 minutes, flipping halfway through, until the edges are crispy and caramelized.
  4. Serve & Enjoy
    • Let the potatoes cool slightly before serving.
    • Garnish with fresh herbs or a sprinkle of flaky sea salt for extra flavor.

Pro Tip: For extra crispiness, spread the potatoes out evenly and avoid overcrowding the pan!
