
Ingredients
For the Shrimp:
- 1 lb shrimp, peeled and deveined

- 3 cloves garlic, minced

- 1 tbsp lemon juice
For the Zucchini Noodles:
- 3 medium zucchini, spiralized
- 1 tbsp olive oil
- ยผ tsp salt
- ยผ tsp black pepper
For the Pesto Sauce:
- 1 cup fresh basil leaves
- ยผ cup grated Parmesan cheese
- ยผ cup pine nuts (or walnuts)
- 2 cloves garlic
- โ cup olive oil
- ยฝ tsp salt
- ยผ tsp black pepper
- 1 tbsp lemon juice
Instructions
1. Prepare the Pesto:
- In a food processor, combine basil, Parmesan cheese, pine nuts, garlic, salt, and pepper.
- While the processor is running, slowly drizzle in olive oil until smooth. Stir in lemon juice and set aside.
2. Cook the Shrimp:
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp, garlic, salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes per side, until the shrimp are pink and opaque.
- Drizzle with lemon juice, toss, and remove from heat.
3. Sautรฉ the Zucchini Noodles:
- In the same skillet, heat olive oil over medium heat.
- Add zucchini noodles, season with salt and pepper, and sautรฉ for 1-2 minutes until just tender. Avoid overcooking to prevent sogginess.
4. Assemble & Serve:
- Remove the skillet from heat and toss the zucchini noodles with the prepared pesto sauce.
- Add the cooked shrimp on top and gently toss to combine.
- Garnish with extra Parmesan cheese and fresh basil, if desired.
