Elote Chicken Bowl ๐ŸŒฝ๐Ÿ—๐Ÿš

A delicious and easy street corn-inspired chicken rice bowl!

Ingredients (Serves 2)

For the Chicken:

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • Juice of 1/2 lime

For the Street Corn (Elote) Topping:

  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 tbsp butter
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream (or Greek yogurt)
  • 1/2 tsp chili powder
  • 1 tbsp lime juice
  • 2 tbsp cotija cheese (or feta)
  • 1 tbsp chopped cilantro

For the Bowl:

  • 2 cups cooked rice (white, brown, or cilantro-lime rice)
  • 1/2 avocado, sliced (optional)
  • Hot sauce (optional)

Instructions

1. Cook the Chicken:

  • In a bowl, mix olive oil, chili powder, cumin, garlic powder, paprika, salt, and lime juice.
  • Rub the seasoning on the chicken.
  • Grill or pan-sear over medium heat for 5-6 minutes per side, until cooked through.
  • Let rest for a few minutes, then slice.

2. Make the Elote Topping:

  • In a pan, melt butter over medium heat and sautรฉ corn until slightly charred (about 3-5 minutes).
  • In a bowl, mix charred corn with mayo, sour cream, chili powder, lime juice, and cotija cheese.

3. Assemble the Bowl:

  • Add cooked rice to a bowl.
  • Top with sliced chicken and a generous scoop of the elote mixture.
  • Garnish with cilantro, avocado, extra cheese, and hot sauce if desired.
