Elote Chicken Bowl ๐ฝ๐๐
A delicious and easy street corn-inspired chicken rice bowl!

Ingredients (Serves 2)
For the Chicken:
- 2 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- Juice of 1/2 lime
For the Street Corn (Elote) Topping:
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 tbsp butter
- 2 tbsp mayonnaise
- 1 tbsp sour cream (or Greek yogurt)
- 1/2 tsp chili powder
- 1 tbsp lime juice
- 2 tbsp cotija cheese (or feta)
- 1 tbsp chopped cilantro
For the Bowl:
- 2 cups cooked rice (white, brown, or cilantro-lime rice)
- 1/2 avocado, sliced (optional)
- Hot sauce (optional)
Instructions
1. Cook the Chicken:
- In a bowl, mix olive oil, chili powder, cumin, garlic powder, paprika, salt, and lime juice.
- Rub the seasoning on the chicken.
- Grill or pan-sear over medium heat for 5-6 minutes per side, until cooked through.
- Let rest for a few minutes, then slice.
2. Make the Elote Topping:
- In a pan, melt butter over medium heat and sautรฉ corn until slightly charred (about 3-5 minutes).
- In a bowl, mix charred corn with mayo, sour cream, chili powder, lime juice, and cotija cheese.
3. Assemble the Bowl:
- Add cooked rice to a bowl.
- Top with sliced chicken and a generous scoop of the elote mixture.
- Garnish with cilantro, avocado, extra cheese, and hot sauce if desired.
