Ingredients (Serves 4)
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tbsp olive oil
- 1 tsp salt
- ยฝ tsp black pepper
- 1 tsp Italian seasoning
- ยฝ tsp smoked paprika (optional, for extra flavor)
For the Potatoes:
- 1.5 lbs baby potatoes (halved)
- 2 tbsp olive oil
- 1 tsp garlic powder
- ยฝ tsp salt
- ยฝ tsp black pepper
- ยฝ tsp paprika
Garlic Parmesan Topping:
- 4 tbsp butter, melted
- 3 cloves garlic, minced
- ยฝ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
1๏ธโฃ Preheat & Prep:
- Preheat oven to 400ยฐF (200ยฐC).
- Line a large baking sheet with parchment paper or lightly grease it.
2๏ธโฃ Season the Potatoes:
- In a bowl, toss baby potatoes with olive oil, garlic powder, salt, pepper, and paprika.
- Spread them on one side of the baking sheet.
3๏ธโฃ Prepare the Chicken:
- Rub the chicken breasts with olive oil, salt, pepper, Italian seasoning, and paprika.
- Place them on the other side of the baking sheet.

- In a small bowl, mix melted butter, minced garlic, and Parmesan cheese.

- Bake for 20 minutes.
- Remove from the oven, brush or spoon the garlic Parmesan butter over the chicken and potatoes.
