A comforting, one-pan meal with tender chicken, creamy sauce, and flavorful rice!

Ingredients (Serves 4)

For the Chicken:

  • 2 large boneless, skinless chicken breasts (cut in half) or 4 chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil

For the Creamy Sauce:

  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/2 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt & pepper to taste

For the Rice:

  • 2 cups cooked rice (white, brown, or wild rice)
  • 1/2 cup frozen peas (optional)

Instructions

1๏ธโƒฃ Cook the Chicken

  • Season the chicken with salt, pepper, garlic powder, and paprika.
  • Heat olive oil in a large skillet over medium heat.
  • Sear the chicken for 4-5 minutes per side until golden brown (it will finish cooking in the sauce). Remove and set aside.

2๏ธโƒฃ Make the Creamy Sauce

  • In the same skillet, melt butter and sautรฉ onions until soft.
  • Add garlic and cook for 30 seconds.
  • Pour in chicken broth, heavy cream, cheese, Italian seasoning, paprika, salt, and pepper. Stir until smooth.

  • Add the cooked rice and peas (if using) into the skillet, stirring to combine.
  • Place the seared chicken on top, cover, and let simmer for 5-7 minutes until the chicken is cooked through.
