Ingredients

For the Pasta:

  • 12 oz pasta (penne, rotini, or elbow macaroni)
  • 1 tbsp olive oil or butter

For the Beef & Sauce:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp salt (adjust to taste)
  • ยฝ tsp black pepper
  • 1 tsp Italian seasoning
  • ยฝ tsp paprika (optional)
  • 2 tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 cup beef broth (or water)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1ยฝ cups shredded cheddar or mozzarella cheese
  • ยฝ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the Pasta: Boil the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Add Flavor: Stir in the diced onion and cook until soft (about 3 minutes). Add minced garlic, salt, black pepper, Italian seasoning, and paprika. Stir for another 30 seconds.
  4. Make the Sauce: Stir in the tomato paste and cook for 1 minute. Add the diced tomatoes and beef broth. Simmer for 5 minutes to let the flavors blend.
  5. Make it Creamy: Reduce heat to low and pour in the heavy cream. Stir well, then add the shredded cheese and Parmesan. Stir until melted and smooth.
  6. Combine & Serve: Add the cooked pasta and toss to coat in the creamy sauce. Simmer for another 2 minutes to let everything come together.
  7. Garnish & Enjoy: Top with fresh parsley and extra cheese if desired. Serve warm!
