
Ingredients (Makes 2 Sandwiches)
For the Chicken Filling:
- 1 cup cooked chicken (shredded or diced)
- 1 ripe avocado, mashed
- 2 tbsp mayonnaise (or Greek yogurt for a lighter option)
- 1 tsp lime juice
- ยฝ tsp garlic powder
- ยผ tsp black pepper
- Salt to taste
- ยผ cup chopped green onions or red onion
For the Sandwich:
- 4 slices of sourdough, ciabatta, or whole wheat bread
- 4 slices cheddar or provolone cheese
- 2 tbsp butter (for toasting)
- 4 tomato slices (optional)
- Handful of baby spinach or lettuce
Instructions
- Prepare the Chicken Avocado Mixture:
- In a bowl, mix shredded chicken, mashed avocado, mayo (or Greek yogurt), lime juice, garlic powder, black pepper, and salt.
- Stir in chopped onions and mix well.
- Assemble the Sandwich:
- Spread the chicken avocado mixture evenly onto two slices of bread.
- Top each with a slice of cheese, tomato slices (if using), and spinach or lettuce.
- Place the remaining slices of bread on top.
- Toast the Sandwich:
- Heat a skillet or griddle over medium heat.
- Spread butter on the outside of each sandwich.
- Cook for 2-3 minutes per side until golden brown and the cheese is melted.
- Serve & Enjoy:
- Slice in half and serve warm with chips, salad, or a side of soup!
