Ingredients (Makes 2 Sandwiches)

For the Chicken Filling:
  • 1 cup cooked chicken (shredded or diced)
  • 1 ripe avocado, mashed
  • 2 tbsp mayonnaise (or Greek yogurt for a lighter option)
  • 1 tsp lime juice
  • ยฝ tsp garlic powder
  • ยผ tsp black pepper
  • Salt to taste
  • ยผ cup chopped green onions or red onion
For the Sandwich:
  • 4 slices of sourdough, ciabatta, or whole wheat bread
  • 4 slices cheddar or provolone cheese
  • 2 tbsp butter (for toasting)
  • 4 tomato slices (optional)
  • Handful of baby spinach or lettuce

Instructions

  1. Prepare the Chicken Avocado Mixture:
    • In a bowl, mix shredded chicken, mashed avocado, mayo (or Greek yogurt), lime juice, garlic powder, black pepper, and salt.
    • Stir in chopped onions and mix well.
  2. Assemble the Sandwich:
    • Spread the chicken avocado mixture evenly onto two slices of bread.
    • Top each with a slice of cheese, tomato slices (if using), and spinach or lettuce.
    • Place the remaining slices of bread on top.
  3. Toast the Sandwich:
    • Heat a skillet or griddle over medium heat.
    • Spread butter on the outside of each sandwich.
    • Cook for 2-3 minutes per side until golden brown and the cheese is melted.
  4. Serve & Enjoy:
    • Slice in half and serve warm with chips, salad, or a side of soup!
