Ingredients (Serves 2)
- 2 whole wheat tortillas (or regular)
- 1 cup fresh spinach, chopped
- ยฝ cup crumbled feta cheese
- ยผ cup shredded mozzarella (optional for extra meltiness)
- 1 small garlic clove, minced
- ยฝ tsp dried oregano
- ยผ tsp red pepper flakes (optional, for heat)
- 1 tsp olive oil
- 1 tbsp Greek yogurt (for serving, optional)
Instructions
1๏ธโฃ Sautรฉ the Spinach:
- Heat olive oil in a pan over medium heat.
- Add garlic and cook for 30 seconds until fragrant.
- Add spinach, oregano, and red pepper flakes.
- Cook for 1-2 minutes until wilted, then remove from heat.
2๏ธโฃ Assemble the Fold:
- Lay a tortilla flat and spread the spinach mixture on half of it.
- Sprinkle feta and mozzarella on top.
- Fold the tortilla in half to form a half-moon shape.
3๏ธโฃ Cook the Fold:
- Heat a dry pan or lightly grease it with oil.
- Cook the folded tortilla over medium heat for 2-3 minutes per side, until golden and crispy.
4๏ธโฃ Serve & Enjoy:
- Slice into wedges and serve warm with Greek yogurt or tzatziki for dipping!
Tip: Add sun-dried tomatoes or olives for an extra Mediterranean kick!
