Homemade Peach Ice Cream
Yields: Approximately 1 quart Prep time: 20 minutes Freeze time: 2-4 hours
Ingredients:
- 2 pounds ripe peaches, peeled, pitted, and chopped
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup whole milk
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
Equipment:
- Ice cream maker
- Large bowl
- Blender or food processor
- Spatula or spoon
Instructions
- Prepare the peaches: In a large bowl, combine the chopped peaches, sugar, and lemon juice. Stir gently and let stand for 30 minutes, allowing the peaches to release their juices.
- Blend the peach mixture: Transfer the peach mixture to a blender or food processor and blend until smooth. If you prefer a chunkier ice cream, reserve some chopped peaches before blending and add them back in later.
- Combine the ingredients: In the same large bowl, combine the blended peach mixture, milk, cream, and vanilla extract. Stir well to combine.
- Churn the ice cream: Pour the ice cream mixture into your ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.
- Freeze the ice cream: Once churned, the ice cream will have a soft-serve consistency. Transfer it to a freezer-safe container and freeze for at least 2 hours, or until firm.
- Serve and enjoy: Scoop the homemade peach ice cream into bowls or cones and enjoy!
