Valentine’s Day Salmon Delight

Ingredients:

  • 1 (1-1/2 pound) salmon fillet, skin on
  • 1/4 cup butter, softened
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine butter, dill, lemon zest, lemon juice, salt, and pepper. Mix well.
  3. Place salmon skin-side down on the prepared baking sheet. Spread the lemon herb butter mixture over the top of the salmon.
  4. Bake for 12-15 minutes, or until the salmon is cooked through.
  5. Remove from oven and let rest for 5 minutes before serving.

Tips:

  • Serve the salmon with a side of roasted vegetables or a salad.
  • For a more flavorful salmon, marinate it in lemon juice and herbs for 30 minutes before baking.
  • If you don’t have fresh dill, you can use 1 teaspoon dried dill.
