Cheesy Beef Quesadillas

Ingredients:
For the Beef Filling:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning mix (or homemade taco seasoning)
ยฝ cup water
Optional: ยฝ cup canned black beans or corn
For the Quesadillas:
8 large flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack)
2 tablespoons butter (for cooking)
Optional Toppings:
Sour cream
Salsa or pico de gallo
Guacamole
Chopped fresh cilantro
Instructions:
1. Prepare the Beef Filling:
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned.
Add the chopped onion and garlic to the skillet and sautรฉ until softened, about 2โ€“3 minutes.
Stir in the taco seasoning mix and water. Let it simmer for 3โ€“5 minutes until the sauce thickens.
If using black beans or corn, stir them into the beef mixture and cook for another minute. Remove from heat.
2. Assemble the Quesadillas:
Lay a tortilla flat on a clean surface. Spread about ยผ cup of shredded cheese over one half of the tortilla.
Spoon 2โ€“3 tablespoons of the beef mixture on top of the cheese.
Add another layer of cheese over the beef for extra cheesiness.
Fold the tortilla in half to create a half-moon shape. Repeat with remaining tortillas.
3. Cook the Quesadillas:
Heat a large skillet or griddle over medium heat and melt a small amount of butter.
Place the folded quesadilla into the skillet and cook for 2โ€“3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
Repeat with the remaining quesadillas, adding more butter as needed.
4. Serve:
Cut each quesadilla into wedges and serve warm with sour cream, salsa, guacamole, or your favorite toppings.ย
