How to Make the Best Fluffy Pancakes

Fluffy pancakes are a breakfast dream! Here’s how to make them:

Ingredients:

  • 1 1/2 cups all-purpose flour  
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted unsalted butter  
  • 1 teaspoon vanilla extract  

Instructions:

  1. Combine dry ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Combine wet ingredients: In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.  
  3. Combine wet and dry: Pour the wet ingredients into the dry ingredients. Gently mix until just combined. Do not overmix. A few lumps are okay.
  4. Rest the batter: Let the batter rest for 5-10 minutes. This allows the gluten to relax and the baking powder to activate, resulting in fluffier pancakes.
  5. Heat the griddle: Heat a lightly oiled griddle or frying pan over medium heat. A good way to test if the pan is hot enough is to flick a few drops of water onto it. If they sizzle and dance, you’re ready.
  6. Cook the pancakes: Pour about 1/4 cup of batter onto the hot griddle for each pancake.  
  7. Flip when bubbly: Cook for 2-3 minutes, or until bubbles start to form on the surface and the edges look set. Flip the pancakes and cook for another 2-3 minutes, or until golden brown on both sides.
