Ingredients:
• 4 boneless chicken breasts
• 2 tablespoons unsalted butter
• 2 tablespoons olive oil
• 4 garlic cloves, minced
• 1 medium onion, finely chopped
• 1 cup heavy cream
• 1/2 cup chicken broth or you can also use 1 tsp Vegetable Seasoning powder
• 1/4 cup grated Parmesan cheese
• 1 teaspoon smoked paprika or 1tsp ground Paprika
• 1/2 teaspoon cayenne pepper (this is optional)
• Salt and freshly ground black pepper to taste
• 2 tablespoons fresh parsley, chopped
• 1/2 teaspoon dried thyme
Instructions:
1. Heat a large skillet over medium-high heat and add olive oil. Season the chicken breasts with salt, pepper, and smoked or ground paprika.
2. Sear the chicken for 5-6 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
3. Lower the heat to medium, add butter to the same skillet, and let it melt. Toss in the minced garlic and onions. Sauté for 2-3 minutes until fragrant and softened.
4. Pour in chicken broth, scraping the bottom of the skillet to deglaze. Add heavy cream and Parmesan cheese, stirring well to combine.
5. Add thyme, parsley, and cayenne pepper if desired. Allow the sauce to simmer for 5 minutes, stirring occasionally, until slightly thickened.
6. Return the chicken to the skillet, spooning the sauce over the chicken. Cook for 2-3 minutes until heated through and coated in the sauce.
7. Garnish with fresh parsley and serve hot with warm bread, rice, or steamed vegetables.
Enjoy!
