Garlic Tomato Baked Chicken

Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
4 cloves garlic, minced
1 can (14.5 oz) diced tomatoes (fire-roasted or regular)
1/4 cup chicken broth (or dry white wine)
1 tsp Italian seasoning
1/2 tsp smoked paprika (optional)
1/4 tsp red pepper flakes (optional, for spice)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Salt and black pepper, to taste
1/4 cup fresh basil or parsley, chopped (for garnish)
Instructions:
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Chicken:
Season the chicken breasts with salt, black pepper, and smoked paprika (if using). Set aside.
3. Make the Garlic Tomato Sauce:
Heat the olive oil in a large oven-safe skillet over medium heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Stir in the diced tomatoes, chicken broth (or wine), Italian seasoning, and red pepper flakes (if using). Simmer for 5 minutes, allowing the flavors to combine.
4. Assemble the Dish:
Place the chicken breasts into the skillet, spooning some of the tomato sauce over each piece.
Sprinkle mozzarella and Parmesan cheese evenly over the chicken.
5. Bake:
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted and bubbly.
6. Garnish and Serve:
Remove the skillet from the oven and let the chicken rest for 5 minutes.
Garnish with fresh basil or parsley and serve warm
