Mediterranean Baked Fish

Ingredients:

– 4 fish fillets (cod, sea bass, or snapper)
– Salt and freshly ground black pepper, to taste
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 1 cup cherry tomatoes, halved
– ½ cup black olives, pitted and sliced
– ¼ cup capers, drained
– 1 lemon, thinly sliced
– ¼ cup chopped fresh parsley
– ¼ cup chopped fresh basil

Instructions:

1. Preheat the oven:
– Preheat your oven to 375°F (190°C).

2. Prepare the baking dish:
– Lightly grease a baking dish with a bit of olive oil to prevent the fish from sticking.

3. Season the fish:
– Place the fish fillets in the prepared baking dish. Drizzle with 1 tablespoon of olive oil and season with salt and freshly ground black pepper to taste.

4. Add the Mediterranean toppings:
– In a mixing bowl, combine the minced garlic, halved cherry tomatoes, sliced black olives, drained capers, and thinly sliced lemon. Toss gently to mix.

6. Bake the fish:
– Drizzle the remaining 1 tablespoon of olive oil over the top and place the dish in the preheated oven.
– Bake for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

7. Finish with fresh herbs:
– Once the fish is baked, remove it from the oven and sprinkle with the chopped fresh parsley and basil for a burst of fresh flavor.

8. Serve:
