Grilled Salmon with Roasted Vegetables

Ingredients:

  • 1.5 pounds salmon fillet, skin on
  • 1 tablespoon olive oil, plus more for brushing
  • Salt and pepper to taste
  • 1 pound mixed vegetables (broccoli florets, carrots, bell peppers, zucchini)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Lemon wedges (for serving)

Instructions:

  1. Prepare the vegetables: Preheat oven to 400°F (200°C). Toss vegetables with 2 tablespoons olive oil, oregano, and garlic powder. Spread in a single layer on a baking sheet. Roast for 15-20 minutes, or until tender-crisp.
  2. Prepare the salmon: Season salmon with salt and pepper. Brush with olive oil.
  3. Grill the salmon: Heat grill to medium-high. Place salmon skin-side down on the grill. Cook for 3-5 minutes, or until lightly browned. Flip and cook for another 2-4 minutes, or until cooked through.
  4. Serve: Remove salmon from grill and let rest for a few minutes before serving. Serve with roasted vegetables and lemon wedges.

Tips:
