Ingredients (Makes 2 Sandwiches)

For the Sandwich:
  • 4 slices sourdough or ciabatta bread
  • 4 slices mozzarella cheese (or provolone)
  • 4 slices crispy bacon
  • ยผ cup sun-dried tomatoes, chopped
  • 2 tbsp butter (for grilling)
For the Pesto Spread:
  • ยผ cup basil pesto (store-bought or homemade)
  • 2 tbsp cream cheese (for extra creaminess)
  • 1 tbsp grated Parmesan cheese

Instructions

  1. Prepare the Pesto Spread:
    • In a small bowl, mix basil pesto, cream cheese, and Parmesan until smooth.
  2. Assemble the Sandwiches:
    • Spread the pesto mixture on one side of each slice of bread.
    • Layer with mozzarella cheese, crispy bacon, and sun-dried tomatoes.
    • Top with another slice of bread.
  3. Grill the Sandwiches:
    • Heat a skillet over medium heat.
    • Spread butter on the outside of each sandwich.
    • Cook for 2-3 minutes per side until golden brown and the cheese is melted.
  4. Serve & Enjoy:
    • Slice and serve warm with a side of soup or a simple salad.
