
Ingredients (Serves 2)
For the Shrimp:
- ยฝ lb (225g) shrimp, peeled & deveined
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- ยฝ tsp smoked paprika
- ยฝ tsp chili flakes (optional, for heat)
- 1 tbsp lemon juice
- 1 tbsp soy sauce
- 1 tbsp honey (for a golden glaze)
- Salt & black pepper to taste
- 1 tbsp chopped parsley (for garnish)
For the Rice:
- 1 cup cooked jasmine or basmati rice
- 1 tbsp butter
- 1 clove garlic, minced
- ยผ tsp turmeric (for a golden color)
- ยผ cup sweet corn (optional)
- Salt to taste
Instructions
- Prepare the Rice:
- In a pan, melt 1 tbsp butter over medium heat.
- Add minced garlic and sautรฉ until fragrant.
- Stir in turmeric and cooked rice, mixing well to coat the grains in golden color.
- Add corn (if using) and a pinch of salt. Stir for another 1-2 minutes, then set aside.
- Cook the Shrimp:
- In a separate pan, melt 2 tbsp butter over medium-high heat.
- Add minced garlic and cook until fragrant.
- Add shrimp, paprika, and chili flakes. Cook for 2-3 minutes per side until shrimp turn pink.
- Stir in soy sauce, honey, and lemon juice. Cook for another minute until the sauce slightly thickens and glazes the shrimp.
- Season with salt and black pepper to taste.
- Assemble the Bowl:
- Divide the golden rice between two bowls.
- Top with the buttery garlic shrimp.
- Garnish with fresh parsley and an extra drizzle of lemon juice if desired.
- Serve & Enjoy!
