Ingredients (Serves 2)

For the Shrimp:
  • ยฝ lb (225g) shrimp, peeled & deveined
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ยฝ tsp smoked paprika
  • ยฝ tsp chili flakes (optional, for heat)
  • 1 tbsp lemon juice
  • 1 tbsp soy sauce
  • 1 tbsp honey (for a golden glaze)
  • Salt & black pepper to taste
  • 1 tbsp chopped parsley (for garnish)
For the Rice:
  • 1 cup cooked jasmine or basmati rice
  • 1 tbsp butter
  • 1 clove garlic, minced
  • ยผ tsp turmeric (for a golden color)
  • ยผ cup sweet corn (optional)
  • Salt to taste

Instructions

  1. Prepare the Rice:
    • In a pan, melt 1 tbsp butter over medium heat.
    • Add minced garlic and sautรฉ until fragrant.
    • Stir in turmeric and cooked rice, mixing well to coat the grains in golden color.
    • Add corn (if using) and a pinch of salt. Stir for another 1-2 minutes, then set aside.
  2. Cook the Shrimp:
    • In a separate pan, melt 2 tbsp butter over medium-high heat.
    • Add minced garlic and cook until fragrant.
    • Add shrimp, paprika, and chili flakes. Cook for 2-3 minutes per side until shrimp turn pink.
    • Stir in soy sauce, honey, and lemon juice. Cook for another minute until the sauce slightly thickens and glazes the shrimp.
    • Season with salt and black pepper to taste.
  3. Assemble the Bowl:
    • Divide the golden rice between two bowls.
    • Top with the buttery garlic shrimp.
    • Garnish with fresh parsley and an extra drizzle of lemon juice if desired.
  4. Serve & Enjoy!
    • Pair with steamed veggies or avocado slices for extra freshness.
