
Ingredients
For the Base:
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 packet (1 oz) taco seasoning
- ยฝ cup water
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 can (15 oz) black beans or pinto beans, drained and rinsed (optional)
- 2 cups crushed tortilla chips
For the Topping:
- 1 ยฝ cups shredded cheddar cheese (or Mexican blend)
- 1 cup shredded lettuce
- ยฝ cup diced tomatoes
- ยผ cup sliced black olives (optional)
- ยผ cup sour cream (for serving)
- 2 tbsp chopped cilantro (optional)
Instructions
1. Cook the Beef:
- Preheat oven to 375ยฐF (190ยฐC).
- In a large skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is soft. Drain any excess grease.
- Stir in taco seasoning and water, then simmer for 2-3 minutes until thickened.
- Add diced tomatoes and beans (if using), stirring to combine.
2. Assemble the Casserole:
- Spread crushed tortilla chips evenly in the bottom of a greased 9×13-inch baking dish.
- Spoon the meat mixture over the chips, spreading evenly.
- Sprinkle shredded cheese on top.
3. Bake & Serve:
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes.
- Top with lettuce, tomatoes, olives, and sour cream before serving.
- Garnish with cilantro, if desired.
Serving Suggestions:
- Serve with extra tortilla chips or warm flour tortillas.
- Add a drizzle of salsa or guacamole for extra flavor.
