For the Hash Brown Crust:
- 3 cups frozen hash browns, thawed and drained
- 1 tbsp olive oil or melted butter
- ยฝ tsp salt
- ยผ tsp black pepper
- ยผ tsp garlic powder (optional)
For the Quiche Filling:
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)
- 5 large eggs
- ยฝ cup milk (or half-and-half for a richer quiche)
- 1 cup shredded cheddar cheese
- ยฝ tsp salt
- ยผ tsp black pepper
- ยผ tsp nutmeg (optional)
Instructions
1. Prepare the Hash Brown Crust:
- Preheat oven to 400ยฐF (200ยฐC). Grease a 9-inch pie dish.
- In a bowl, mix thawed hash browns, olive oil or butter, salt, pepper, and garlic powder.
- Press the hash browns firmly into the bottom and sides of the pie dish to form a crust.
- Bake for 20-25 minutes, until golden and crispy. Remove from oven and set aside.
2. Make the Filling:
- Heat olive oil in a skillet over medium heat. Add onion and sautรฉ until soft, about 3 minutes.
- Stir in garlic and cook for 30 seconds, then add spinach and cook until wilted (or heated through if using frozen). Remove from heat.
- In a bowl, whisk together eggs, milk, cheddar cheese, salt, pepper, and nutmeg. Stir in the cooked spinach mixture.
3. Assemble & Bake:
- Pour the egg mixture into the pre-baked hash brown crust.
- Bake at 375ยฐF (190ยฐC) for 30-35 minutes, or until the quiche is set and slightly golden on top.
- Let cool for 5-10 minutes before slicing.
