Ingredients

For the Shrimp:
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced

  • 1 tbsp lemon juice
For the Zucchini Noodles:
  • 3 medium zucchini, spiralized
  • 1 tbsp olive oil
  • ยผ tsp salt
  • ยผ tsp black pepper
For the Pesto Sauce:
  • 1 cup fresh basil leaves
  • ยผ cup grated Parmesan cheese
  • ยผ cup pine nuts (or walnuts)
  • 2 cloves garlic
  • โ…“ cup olive oil
  • ยฝ tsp salt
  • ยผ tsp black pepper
  • 1 tbsp lemon juice

Instructions

1. Prepare the Pesto:
  1. In a food processor, combine basil, Parmesan cheese, pine nuts, garlic, salt, and pepper.
  2. While the processor is running, slowly drizzle in olive oil until smooth. Stir in lemon juice and set aside.
2. Cook the Shrimp:
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp, garlic, salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes per side, until the shrimp are pink and opaque.
  3. Drizzle with lemon juice, toss, and remove from heat.
3. Sautรฉ the Zucchini Noodles:
  1. In the same skillet, heat olive oil over medium heat.
  2. Add zucchini noodles, season with salt and pepper, and sautรฉ for 1-2 minutes until just tender. Avoid overcooking to prevent sogginess.
4. Assemble & Serve:
  1. Remove the skillet from heat and toss the zucchini noodles with the prepared pesto sauce.
  2. Add the cooked shrimp on top and gently toss to combine.
  3. Garnish with extra Parmesan cheese and fresh basil, if desired.
