A comforting, one-pan meal with tender chicken, creamy sauce, and flavorful rice!

Ingredients (Serves 4)
For the Chicken:
- 2 large boneless, skinless chicken breasts (cut in half) or 4 chicken thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tbsp olive oil
For the Creamy Sauce:
- 2 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half)
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/2 tsp Italian seasoning
- 1/2 tsp paprika
- Salt & pepper to taste
For the Rice:
- 2 cups cooked rice (white, brown, or wild rice)
- 1/2 cup frozen peas (optional)
Instructions
1๏ธโฃ Cook the Chicken
- Season the chicken with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium heat.
- Sear the chicken for 4-5 minutes per side until golden brown (it will finish cooking in the sauce). Remove and set aside.
2๏ธโฃ Make the Creamy Sauce
- In the same skillet, melt butter and sautรฉ onions until soft.
- Add garlic and cook for 30 seconds.
- Pour in chicken broth, heavy cream, cheese, Italian seasoning, paprika, salt, and pepper. Stir until smooth.
3๏ธโฃ Smother the Chicken & Rice
- Add the cooked rice and peas (if using) into the skillet, stirring to combine.
- Place the seared chicken on top, cover, and let simmer for 5-7 minutes until the chicken is cooked through.
