A deliciously spicy and tropical take on classic nachos, featuring juicy shrimp, melted cheese, and a fresh mango salsa!

Ingredients

For the Shrimp:
  • 1 lb shrimp (peeled and deveined)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ยฝ tsp smoked paprika
  • ยฝ tsp cumin
  • ยฝ tsp garlic powder
  • ยฝ tsp salt
  • ยผ tsp black pepper
  • ยผ tsp cayenne pepper (optional for extra heat)
  • 1 tbsp lime juice
For the Nachos:
  • 1 bag tortilla chips
  • 2 cups shredded Mexican blend cheese (or cheddar & Monterey Jack)
For the Mango Salsa:
  • 1 ripe mango (diced)
  • ยฝ red bell pepper (diced)
  • ยผ red onion (finely chopped)
  • 1 small jalapeรฑo (minced)
  • 2 tbsp fresh cilantro (chopped)
  • 1 tbsp lime juice
  • Salt to taste
Optional Toppings:
  • Sour cream
  • Sliced avocado or guacamole
  • Fresh jalapeรฑo slices
  • Extra cilantro

Instructions

  1. Prepare the Shrimp:
    • In a bowl, toss the shrimp with olive oil, chili powder, smoked paprika, cumin, garlic powder, salt, black pepper, cayenne (if using), and lime juice.
    • Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side until they are pink and slightly charred. Set aside.
  2. Make the Mango Salsa:
    • In a bowl, combine diced mango, red bell pepper, red onion, jalapeรฑo, cilantro, and lime juice.
    • Mix well and season with salt to taste. Set aside.
  3. Assemble the Nachos:
    • Preheat oven to 375ยฐF (190ยฐC).
    • Spread tortilla chips evenly on a large baking sheet.
    • Sprinkle the shredded cheese over the chips.
    • Bake for 5-7 minutes, or until the cheese is melted and bubbly.
  4. Add the Toppings:
    • Remove the nachos from the oven and evenly distribute the cooked shrimp on top.
    • Spoon mango salsa over the nachos.
    • Add optional toppings like sour cream, avocado, and extra jalapeรฑos for extra flavor.
  5. Serve & Enjoy!
