A deliciously spicy and tropical take on classic nachos, featuring juicy shrimp, melted cheese, and a fresh mango salsa!

Ingredients
For the Shrimp:
- 1 lb shrimp (peeled and deveined)
- 1 tbsp olive oil
- 1 tsp chili powder
- ยฝ tsp smoked paprika
- ยฝ tsp cumin
- ยฝ tsp garlic powder
- ยฝ tsp salt
- ยผ tsp black pepper
- ยผ tsp cayenne pepper (optional for extra heat)
- 1 tbsp lime juice
For the Nachos:
- 1 bag tortilla chips
- 2 cups shredded Mexican blend cheese (or cheddar & Monterey Jack)
For the Mango Salsa:
- 1 ripe mango (diced)
- ยฝ red bell pepper (diced)
- ยผ red onion (finely chopped)
- 1 small jalapeรฑo (minced)
- 2 tbsp fresh cilantro (chopped)
- 1 tbsp lime juice
- Salt to taste
Optional Toppings:
- Sour cream
- Sliced avocado or guacamole
- Fresh jalapeรฑo slices
- Extra cilantro
Instructions
- Prepare the Shrimp:
- In a bowl, toss the shrimp with olive oil, chili powder, smoked paprika, cumin, garlic powder, salt, black pepper, cayenne (if using), and lime juice.
- Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side until they are pink and slightly charred. Set aside.
- Make the Mango Salsa:
- In a bowl, combine diced mango, red bell pepper, red onion, jalapeรฑo, cilantro, and lime juice.
- Mix well and season with salt to taste. Set aside.
- Assemble the Nachos:
- Preheat oven to 375ยฐF (190ยฐC).
- Spread tortilla chips evenly on a large baking sheet.
- Sprinkle the shredded cheese over the chips.
- Bake for 5-7 minutes, or until the cheese is melted and bubbly.
- Add the Toppings:
- Remove the nachos from the oven and evenly distribute the cooked shrimp on top.
- Spoon mango salsa over the nachos.
- Add optional toppings like sour cream, avocado, and extra jalapeรฑos for extra flavor.
